Ingredients
  

  • 8 ounces of spaghetti
  • 2 tablespoons of olive oil
  • 4 large eggs
  • Salt and pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Drain the cooked spaghetti using a strainer and set aside.
  • In a large mixing bowl, whisk together the eggs, salt, and pepper.
  • Heat the olive oil in a non-stick skillet over medium heat. Add the cooked spaghetti to the skillet and toss to coat the strands evenly with the oil.
  • Pour the egg mixture over the spaghetti in the skillet and gently stir to combine, ensuring that the eggs form a creamy coating around the pasta. Cook for 2-3 minutes, stirring occasionally, until the eggs are fully cooked and the spaghetti is heated through.
  • Remove the skillet from the heat and divide the spaghetti into serving plates. Top with grated Parmesan cheese and chopped fresh herbs, if desired.
  • Serve the spaghetti for breakfast while it's still warm and enjoy!
