Ingredients
  

  • 8 large eggs
  • 1 cup egg whites
  • 1 lb turkey sausage crumbled
  • 1 red bell pepper diced
  • 1 cup spinach chopped
  • 1 cup shredded cheddar cheese
  • 8 whole wheat tortillas
  • Salt and pepper to taste

Instructions
 

  • In a large skillet over medium heat, cook the turkey sausage until browned and fully cooked.
  • Add the diced red bell pepper to the skillet and sauté for an additional 3-4 minutes or until softened.
  • In a mixing bowl, whisk together eggs and egg whites; season with salt and pepper.
  • Pour the egg mixture into the skillet and cook, stirring occasionally, until eggs are scrambled and fully cooked.
  • Stir in the chopped spinach until wilted, then remove the skillet from heat.
  • Divide the egg-sausage mixture onto each tortilla, sprinkle with cheddar cheese, and roll up to close.
  • Wrap each burrito tightly in aluminum foil or place in a meal prep container and store in the refrigerator or freezer until ready to eat.

Notes

For a vegetarian version, substitute turkey sausage with a plant-based sausage option.
These burritos can be frozen for up to 3 months; reheat in the microwave for 2-3 minutes for a quick meal.
Feel free to add other vegetables such as mushrooms or onions for variety.
